Roll Recipe

With a family reunion and a dinner at church I've made several rolls this week. I thought I would pass this one on to everyone. It's really easy to make and I always have excellent results.
I usually double this recipe and you can put these in the freezer after the first raising and while not quiet as good as fresh they are still very tasty. I mix these with a stand mixer which has dough hooks. You could mix it by hand it will just take a little longer.

3 1/4 cup bread flour
1 cup warm milk
1/2 tsp salt
1 tbs sugar
2 tsp yeast
1/2 stick unsalted butter
2 eggs


I warm the milk in the microwave then pour into the bowl. Add yeast, salt, sugar, and the butter cut into hunks. Crack the eggs in another bowl and give a quick stir with a fork then add to the wet ingredients. At this point I turn on the mixer and slowly start to add the flour. Once it forms a nice elastic dough I put just a little oil or melted butter over it, turn it in the bowl to coat, and then put plastic wrap over the bow. I set it in a draft-free place that is warm and let raise till double in size. I then punch it down, turn it out onto a floured surface, roll out to about 1/2 inch thickness. I roll it out in a circle and then cut it with a pizza cutter into wedges like you would a pie. I cut either 12, if I've got plans to use this for sandwiches, or 16 pieces. You can cut and shape it into more traditional roll shape but I start at the big end of a "slice" and roll it up on itself. I place them on a greased baking sheet and cover with a cloth to let raise not quite double again. When they have raised I place them in a pre-heated 325 degree oven and bake until brown.

If I'm going to freeze I flash freeze them on the pan before the second raising. Then when I want to use them I pull them out, place them on a greased baking sheet, let thaw and raise as if fresh, and bake as usual. You can also just freeze the dough as soon as it's mixed, thaw, and proceed as if fresh.

Everyone loves these rolls. You can shape these for loaf bread as well and I've even rolled them a little thinner and cut out large rounds for homemade hamburger buns. These make very good cinnamon buns too. Also good to add herbs to for an herb bread.
